Rye flour is stone-milled from the whole rye kernel, producing a dense, dark flour with a complex, earthy flavour and outstanding fibre content that forms the backbone of traditional European rye breads, sourdough loaves, and crisp-textured crispbreads. Unlike wheat flour, rye flour contains pentosan gums that absorb large amounts of water and contribute to the distinctive moist, dense crumb structure that defines authentic rye baking. Available in Non-GMO and conventional grades from Western Canada.
